Ingredients:
Balsamic-glazed Onions:
1 half onion, thinly sliced
1 tbsp. olive oil
1 tbsp.  balsamic vinegar
Salad:
1/2 can of chickpeas, drained
1 tbsp. olive oil
Kosher salt to season
Dressing:
1 tbsp. honey mustard
1 tbsp. balsamic
1/2 tbsp. olive oil
Salad:
1 tbsp. dried cranberries
1-1 1/2 oz.  goat cheese
1-1 1/2 cup tightly packed arugula
Instructions:
 
1. On medium high heat, sauté onions in oil until soft and brown. Pour in balsamic and let it reduce. Set aside to cool.
2. Toss olive oil and chickpeas with salt. Place on rack lined with parchment paper and bake on 400ºF for 20-30 minutes, until crispy golden brown. Set aside to cool.
3. Combine together arugula, balsamic-glazed onions, chickpeas, and mixed dressing.
4. Crumble on goat cheese and sprinkle with dried cranberries.
